High Performance Recipe: Spinach Omelet

Spinach Omelet (serves 1)

Ingredients

2-3 eggs

½ cup chopped spinach

½ shallot, chopped

¼ cup chopped mushrooms

1 tsp. coconut oil

Directions

  1. Heat up a frying pan on medium-low heat.
  2. In a small bowl whisk eggs with salt and pepper.
  3. Add coconut oil, once melted add shallot and mushrooms and spinach. Sauté for 1 minute or until spinach is wilted.
  4. Add eggs, continue cooking until eggs are cooked on top and then fold over.
