Spinach Omelet (serves 1)
½ cup chopped spinach
½ shallot, chopped
¼ cup chopped mushrooms
1 tsp. coconut oil
- Heat up a frying pan on medium-low heat.
- In a small bowl whisk eggs with salt and pepper.
- Add coconut oil, once melted add shallot and mushrooms and spinach. Sauté for 1 minute or until spinach is wilted.
- Add eggs, continue cooking until eggs are cooked on top and then fold over.
