Ingredients

  • 15oz can chickpeas, drained and rinsed
  • 2 tablespoons pitted olives, halved and sliced
  • 1 tablespoon red onion, chopped
  • 1/2 a lemon, zested and juiced
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons olive oil

Directions

  1. Place chickpeas in a bowl and lightly smash with fork or potato masher until creamy, with some chunks remaining.
  2. Add the olives, onion, lemon juice and zest, parsley, and olive oil.
  3. Gently combine.
