Coconut oil has many amazing properties including anti-inflammation and can be a good source of energy for exercise. Here are some recipes from Gary Roberts for pre- or post-workout!
Avocado Chocolate Pudding (serves 2-4)
2 large, ripe avocados
1 tbsp. coconut oil
1-2 tsp. raw honey
2 tbsp. raw cacao powder
Add all ingredients into a food processor or high-speed blender until smooth.
Coconut Energy Mash (serves 1)
2 tbsp. coconut oil, mashed
1 mashed banana
1 tbsp. ground flaxseed
1 tbsp. chia seeds
1 tsp. pure maple syrup or raw honey
- Mash banana and coconut oil in a small bowl.
- Mix in flaxseed, chia seeds and maple syrup.
